Dripping in French cheese and wine the Croque Madame is a precocious, bistro lunch straight from the streets of Paris. The goose egg on top is our opulent twist on this time-honoured classic.

What you’ll need
Thick sliced pieces of buttermilk bread
4 slices of farmhouse ham
1 free range goose egg
100g grated Comte cheese
100g grated Gruyere cheese
2 garlic cloves pureed
100ml white wine
1tsp Dijon mustard
1 knob of butter
Let’s get cooking
For the cheese sauce, bring the white wine to a simmer in a saucepan. Place both grated cheeses into a mixing bowl and sprinkle with the cornflour. Toss the cheese so that it gets a light coating of the flour and slowly add all of the cheese to the wine, whisking continuously over a low heat until it looks like a cheese ‘fondue’ style sauce.
Add the Dijon, garlic, salt and pepper to taste.
Pour the cheese sauce back into the mixing bowl, ready for spreading on the sandwich.
To build the sandwich
Butter bread slices and place them butter side down on the surface, then spread both unbuttered sides with a generous dollop of the cheese sauce.
Add the ham, season and place the two pieces of bread together.
Heat a frying pan over a medium heat, and fry the sandwich until golden brown on both sides until the butter is caramelised, making it extra crispy.
Remove from the pan and set on kitchen paper to remove excess grease.
Then add the goose egg and a knob of butter to the pan, fry the egg and season. Place the egg on top of the sandwich and serve.
